Winemaking
The Colombard is grown on sandy loams and is drip irrigated. The vines are 9 years old and are vertically spured trained with two foliage wires. The Chardonnay is planted on red loam soil. The vines are 10 years old and are trained to a double cordon. Rows are planted in a east west orientation to take advantage of the cooler evening easterly winds. The juice was fermented in stainless steel tanks at temperatures between 13 and 18 degrees locking in the zesty fruit flavours. Wine was transferred off yeast lees after ferment in order to obtain a clean fresh style of wine.

Tasting Note
Uplifted peach and guava notes on the nose. The palate offers full punchy citrus and white peach flavours finishing with clean crisp acidity.

Serving Suggestion
Delicious on its own, or try with shellfish, Asian salads, roast chicken and creamy pasta dishes.
