Winemaking
Vines are grown following tradition: leaves are removed before had-picking grapefruits. Vinification also follows traditional methods, with total destemming before fermentation on skins at controlled temperature. The lenght of fermentation is based and adapted on quality and ripening level of grapes. A part of the wine ages in barriques, 30% in new barrels, 70% in second or third barrels;The rest of wine lays in concrete tanks.
Tasting Note
Deep and attractive garnet colour. Toasty aromas on the nose are substained by black fruit notes. Warm and rich on the palate, this wine displays a solid structure thanks to elegant and persistant tannins.

This bottle will be appreciated at its best with an entrecote aux girolles (rib steak with mushrooms)
