100% Cabernet Sauvignon

The Cabernet is planted on clay loam soil with variable layers of limestone gravel. The vines are over 20 years of age and are trained to a single cordon with a single foliage wires. Vines are not irrigated. The Cabernet grapes were harvested at over 14.5Be, allowing flavour and fruit to be in balance. The must was fermented at temperatures, between 20 - 28º in order to help extract flavour and colour components from the grape skins. The skins were then gently pressed, with only the free run fraction being kept ensuring that soft tannins are present in the final wine. The wine was then stored on toasted French oak staves and allowed to mature prior to bottling.

Tasting Note
A medium bodied, deep red wine with cassis and blackcurrant aromas, this Cabernet Sauvignon shows nuances of tobacco leaves and toasty oak on the nose. The palate has chocolate spice and dark berry flavours backed by gentle tannins.

Serving Suggestions
The perfect match to roast rack of lamb, but also delicious served with grilled red meats, BBQ's and hard mature cheeses.
