94% Chardonnay
6% Pinot Noir

Grapes are harvested from a young vineyard of 5 years old, situated on sandy loam soils, located in the Adelaide Hills, South Australia. The vineyard is drip irrigated and trained to a double cordon single foliage wire. Fruit was harvested between 12.5 and 13 BeThe Chardonnay grapes are harvested at night during the coolest period of the day. The grapes are lightly crushed insuring the free run juice extraction contains minimal phenolics. The juice is fermented on French and American oak planks to give complexity to the varietal fruit flavours. Wine is allowed to remain on oak and ferment on lees for two months to help give some extra mouth feel to the palate.

Tasting Note
Sarus Chardonnay Pinot Noir is crafted from the breathtakingly beautiful vineyards in the Adelaide Hills. The naturally cool climate gives the Chardonnay an elegant, refreshingly mineral character. The lovely white peach aromas come from the addition of a little Pinot Noir, which also enhances the weight and complexity of this wine. This delicately coloured wine with a faint green hue displays grapefruit and yeasty overtones.

Serving Suggestion
Great slightly chilled on its own or to pair with many kind of pasta (ie. pesto, carbonara, seafood); excellent with seafood, thanks to its mineral notes.
