100% Carignan Vieilles Vignes (old vines)

Winemaking notes
These are old Carignan vines-60 years old-goblet-pruned on the shaly foothills of the Espinouse massif, in North-West Languedoc. To fully express the potential of the Old Carignan vines, the grapes are handpicked and vinified through carbonic maceration in a controlled-temperature environment.

Tasting Note
This is a dominantly deep, dark red wine with magnificent shiny reflections.The seductive nose releases soft fruit aromas, together with more complex flavours recalling figs, scrubland and even some empyreumatic touch. As a result, the aromatic palette is just richer. In the mouth, the fruity sensation is prevailing thanks to elegant, silky tannins. This wine has a solid structure and offers a scrubland scent-dominated persistence.

Serving Suggestion
Drink it at a 16-18°C temperature. The complex aromas of Carignan Elégance handsomely match South-of-France dishes, such as chicken with olives,cassoulet (meat and bean casserole) or roasted game.
