90% Cabernet Sauvignon
10% Merlot 

The Cabernet Sauvignon was from Koomooloo Vineyards Block 2 with a selection of 2 clones (LC30 and SA 125). Shoot thinned in spring then after set, leaves removed in the bunch region to allow sunlight penetration. Bunch thinning was performed before colour development, aiming at 4t/Ha. Another run after colour change to remove any remaining green bunches. Merlot from Block 5 underwent a similar regime to the cabernet sauvignon except the shoots were brought back to one bunch (6t/Ha).The fruit was all hand picked at first light and transported to the winery. Each batch was hand sorted on a belt conveyor table, ensuring only sound, full colour berries made it to the fermenters. The fruit was then chilled in enclosed fermentators and completed using indigenous vineyard yeast. The various batches fermented between 5 – 7 days , allowed to peak in temperature at approx 30 degrees.The fermenting wine was gently pumped over the top of the tank twice daily to ensure even temperatures and ideal colour and tannin extraction from the skins. Post-ferment the wine was macerated on skins for approximately two weeks, extracting tannins, flavour and developing body and texture.Once the wine had achieved ideal balance of its components it was drained off skins, pressed softly and combined with the drainings. The wine was racked off gross lees after 2 – 3 days of settling and transferred to 100% new French oak.Post winter and malo-lactic fermentation the wine was racked off fine lees, aerated, egg fined and returned to the same barrels where it spent a total of 30 months before blending and bottling.

Tasting Note
Bright red and purple in colour. A nose of incredible power and lift of blackberry fruits. No.5 spent a long time in new French oak and still the dominant aroma is the fruit with many rich layers. Deceptively the palate is sheer elegance, it is burtsting with classic Cabernet fruit supported with understated oak and fine tannins. The palate is soft and intense.

Serving Suggestion
Remarkable match for hard paste cheeses. Great choice to accompany with Lasagna, Cannelloni and other kinds of oven-cooked pastas with meat/tomato/cheese based sauce.
