100% Semillon

Grapes grown from 30 - 50 year old vines on deep loam soil at 300m altitudeComplexed by judicious skin and lees contact. Fermented in stainless steel and allowed to undergo full malolactic fermentation. This wine exemplifies the perfect marriage between Semillon and the Barossa Valley and is complexed by judicious skin and lees contact.   Only a really disciplined collector could bear to put this down as it is delicious now.   Still, it would be very, very interesting to see it again in a few years time.

Tasting Note
Brilliant with a tinge of gold.  Tropical fruit and melon aromas supported by hints of a light citrus backbone.  Rich and silky at the outset, opening into a generous and weighty mid-palate where succulent tropical citrus characters are found in abundance.  Showing incredible structure and depth, the palate finishes with neat, clean, crisp acidity. 

Serving Suggestions
Serve lightly chilled with vegetarian food, white meats and fleshy fish dishes and shell fish.  Excellent with creamy pasta dishes and risottos but equally delicious enjoyed on its own.
