Winemaking
The 280 hectare vineyard is situated at the extreme end of the southern part of Ardeche around Bourg Saint Andreol. It is planted on terraces on steep and porous slopes ladens with shringles. The climate is typically Mediterranean - fresh, dry and influenced by the Mistral wind. Syrah and Grenache grapes are made separately into wine. Grenache is briefly macerated for 5 to 6 days at a low temperature in order to conserve its fruity character. The winemaking of Syrah lasts for about 7 days in order to obtain silky tannins helping to createthe wine's structure.

Tasting Note
Bouquet of raspberries, red fruits and spices. Nice lenght, round palate, with silky and elegant tannins.

Serving Suggestions
Suitable for braised ham, sauteed Provencal lamb, mutton stew, roast pork with sage and many other meat preparations.
